Today, I would like to share with you a simple and refreshing recipe. This recipe includes my favorites pasta and eggplant!! Yehey.
Here it goes and hope you like it...
Complexity: Easy
Preparation and Cooking time: 45 minutes
Ingredients:
1 medium sized eggplant
Pasta Spaghetti
1 small sized white onion
4 cloves garlic
Olive oil
Brown sugar
Tomato Sauce with Thyme
Cheddar and parmesan cheese
Procedure:
1. Wash the eggplant. Pinch it with fork. Roast it. Make sure that the entire eggplant is roasted. When eggplant is roasted, let it set and then peel it off.
2. Prepare the pasta. Bring the water to a boil, add salt and then put the pasta. Cook it according to the texture that you want (al dente or well cooked).
3. In a separate pan, sauté garlic and onion.
4. Pour the tomato sauce with thyme and add the cheese.
5. Put the pasta. Stir until the sauce is evenly distributed.
6. Ready to serve. Enjoy.
